Meet The Local Cheesemakers Who Supply Laceys Family Farm

Laceys Family Farm is lucky to work with some wonderful local businesses who share our core values of providing quality produce for the community. The farm shop stock cheeses from both the Marlow Cheese Company and the Nettlebed Creamery. We had a chat with both cheesemakers to hear more about their businesses. Their top 'secrets' for delicious cheeses are revealed below along with what their cheeses are known for and why the like working with us.  

Head honcho James is the driving force behind the Marlow Cheese Company who produce delicious local cheese. James and his late wife Lynda set up the company in 2016, a realisation of a long held dream producing their first cheese, a soft Lactic called Cygnet. The Marlow Cheese Company now offers a staggering variety of different cheese with nine different award winning products. 

James, what is your top 'secret' for making great cheese?

Lynda was our top secret she knew how to turn lovely gorgeous Guernsey cows milk into award-winning cheese. 

What are your cheeses known for?

Artisan handmade quality. 

Why do you like working with us? 

I absolutely love Laceys Farm and love all the hard work you put into it to get such lovely rewards, the animal welfare is absolutely outstanding. 

Cheese under the spotlight: Bisham 

Bisham is a brie style cheese which is soft and creamery made from Guernsey milk. This gives it a wonderful flavour with mushroom and tangy notes. It is a great all-rounder on a cheese board and can be enjoyed as a family treat or with a glass of sparking or red wine. 

The Nettlebed Creamery Farm has been family run for over a century when Rose's great grandfather brought the farm in 1901. The diary was later established in 1950 and fully organic in 2001. The creamery produces three different cheeses, milk, kefir and ice cream. As well as having a rustic and bustling cafe onsite: the Cheese Shed. Rose shares a few of her secrets with us below.

What is your top 'secret' for making great cheese?

Make sure you have superb milk and science and artistry in equal measure. 

What are your cheeses known for?

Complex flavours and great texture. It’s take us a while!

Why do you like working with us? 

Absolutely fabulous, one of the few remaining family farms dedicated to great herd management and championing great produce.

Cheese under the spotlight: Witheridge 

The iconic Witheridge in Hay is a fun cheese, award winning and delicious. The Witheridge has the strength of a mature cheddar but with sweet tastes. The hay gives it grassy flavours while keeping the cheese lovely and moist.
